5 Gluten Free {kid friendly} Dinner Recipes

Lent is here and many of us choose to not eat meat on fridays and to also give up something for the next 40 days. This year we have decided to not eat wheat. We are allowing the kids to, because well, they are 21 months and getting very picky! Below is our first week of meal planning that contains wholesome foods that are also gluten free. There are also some ideas for toddlers included and this fridays meatless meal idea!

Avocado Chicken Salad 

This is a great spring or summer meal - super light and simple to make. If you feel like you need a bit more than this, some roasted vegetables or a spring salad go great on the side. Since are not eating any bread we are making these in lettuce wraps, but you can also use tortillas if you are not opposed to eating wheat products!! To make toddler friendly and depending on their age, you can just exclude the walnuts and/or cut up the grapes a little smaller. But overall, this is a great meal for the littles to enjoy with you! 

Baked Chicken & Roasted Asparagus, Brown Rice

I love recipes that are all on a pan or in a pot. This chicken is super tasty and easy to make.  For sides we  roast asparagus in oven, you can also add some cherry tomatoes and shallots for extra flavoring and then top with some parmesan cheese and fresh lemon when out of the oven. For some grain cook up a side of brown rice, for additional flavor, cook the rice in chicken broth instead of water.

To save time for the next days dinner, we make extra rice so there is leftover for our Taco Night Salad bowls! These are so fun and easy and the best is that they are super toddler friendly. We will sometimes make them their own quesadilla, then give them all of the sides we are having in our taco bowl! 

Tomato Basil Cheese Pie

One of my favorite Pinterest recipe finds has been this cheese pie! It is so quick and easy, the crust that you make with this works well with other things too, like if you want to make a quiche with a gluten free crust! It was super simple, everything gets tossed in the pie dish and baked. We served it with a salad and roasted aspargus! I was also happy to see that our toddlers loved it too! Surprisingly, we get them to eat aspargus, otherwise I would suggest making another veggie to go along with this for the littles!

Sesame Cauliflower

A perfect addition to your fried rice or stir fry and for those who do a meatless meal for lent or any day during the week the rest of the year, this is a great option! We make a vegetable fried rice recipe a few times a month, because it is one of our boys favorites. Sometimes I add chicken to it for extra protien, but recently I have been making this sesame cauliflower instead! The recipe says to use all purpose flour, but we use Bob's Gluten Free 1:1 flour, so there is no guessing in trying to come up with a gluten free flour option. I also think that using the GF flour the caulifower comes out just a bit crisper too, which is always a bonus!
