Easter Cookies

Easter sweets are seriously my weakness. I am automatically transported back to childhood and I want all of the candy that comes along with it!

Typically we eat healthy most of the year, but when it comes to the holidays, I LOVE to bake. So I will always do some special treats during this time. During most Holidays I make my grandma's cookie recipe! This year, I wanted to make it a little bit more fun for the kids so I added in the Easter color M&Ms.

We were able to keep chocolate away from our boys until their 2nd Halloween (they were 17 months). And of course, the M&Ms were the favorite. So I decided on special occasions I will have those around for them.

I kind of want to go all out and make this into an Easter Cookie Pie too! But that might have to wait until next year.

If you are wondering what I mean or looking for inspiration for an Easter Cookie Pie, you can check out what I did for Valentines Day and just replace the red and pink with Spring colors!

The recipe below is my grandmother's basic Chocolate Chip Cookie recipe, only I decrease some of the chocolate chips and I add in some M&Ms! Hope you enjoy it as much as we do!

For this recipe you will need a hand mixer, cookie sheet, parchment paper, cookie scoop of your choice and cooling rack.

Also, when you are baking, be sure to get a really good quality vanilla extract. I know it is pricey, but it is SO worth it. The flavor that comes from a pure vanilla brings out all of the flavors so much more.

2 ¼ Cups Flour

2 Sticks Salted Butter (softened)

½ Cup Brown Sugar

½ Cup  Sugar

1 Tsp Baking Soda

2 Eggs

½ Tbsp Pure Vanilla Extract

8oz Chocolate Chips

8oz Easter/ Spring Color M&Ms (+ extra to top on of each cookie)

Preheat Oven to 350 degrees

Line a cookie sheet with parchment paper

Beat Sugar and Butter together until well blended

Add in Eggs and Vanilla

Beat until combine

Then slowly add in dry ingredients

Once all of the mixture has formed into dough fold in chocolate chips and M&Ms

Scoop (with your cookie scoop size of choice) on cookie sheet. Place a few M&Ms on top

Bake 9-12 minutes, depending on size of cookie and oven

** start with 9 mins and then increase 1 minute to find what is best. I found for small cookies 9 minutes and large cookies are closer to 12 mins.

Let cookies sit on tray for about 1-2 minutes after you remove them from the oven, then transfer them to a cooling rack.
